¿Qué tan cierto es que la comida mexicana tiene que ser picante?

I am loving all the food here in Mexico. Seriously, every region has something amazing. But I keep hearing that Mexican food *has* to be spicy. Is that really true? I find delicious non-spicy options all the time.
